The most exciting addition this year is the new DreamCatcher lift that will access 200-plus acres of never-skied-before terrain geared toward an advanced intermediate to expert skier or boarder. Word is that the new runs will offer some of the best tree skiing in the state.
Also new this season is an upgrade of the Tombstone lift from a quad to a high-speed six-pack. Tombstone happens to be a main artery for the mountain and nearly everyone who spends a day at The Canyons will ride it at least once. The additional seating will increase the uphill capacity by a staggering 52 percent, allowing guests to do a lot more skiing down the mountain and a lot less waiting in line to get up the mountain. The twelve extra cabins on The Cabriolet lift that transports guests from the street level parking lot to the village resort level also mean less time in a line and more time to hit the runs. Once at the resort level, guests will have the option of grabbing some coffee or breakfast at the new Cabriolet Café while they walk to the Flight of The Canyons Gondola.
The Flight of The Canyons unloads skiers and boarders at the Red Pine mid-mountain area, where they will find a newly remodeled and updated Red Pine Lodge. Major construction took place on the building this summer, resulting in an expanded second floor with over 175 extra seats as well as extended patio seating options. The menu is being reworked by a new executive chef, Sebastian Lizarzaburu. Chef Lizarzaburu will be serving handcrafted mountain cuisine with an array of choices.
The Canyons Carvery is a new addition to the Red Pine Lodge and will highlight a variety of meats served with mashed potatoes and roasted vegetables. You can still find the ubiquitous chili, burgers, pizzas and pastas, but on a gourmet level not typically found on the mountain at ski resorts. Guests will be able to step into Red Pine for a taste far from the usual. Daily specials such as pork osso buco, chicken Oscar, or chili rellenos are a few of the delectable new choices.
Take a break from skiing to enjoy lunch at Lookout Cabin (reservations highly recommended) with Chef Lizarzaburu’s papaya and crab stuffed ahi tuna roll starter, lamb sirloin with barley risotto parmesan cakes, and a smoked garlic jus or whole grain mustard encrusted Kurabuta pork loin with a tomato confit.
The Grand Summit Hotel also has a new executive chef, Joseph Trevino. Chef Trevino will be unveiling a cutting edge menu at The Cabin, taking the restaurant in a radically new direction with his
brand of gourmet American comfort food. Signature dishes will include a smoked salmon and wilted arugula eggs benedict served on a toasted onion bagel with chive hollandaise, wild game potpie with buffalo, venison and lamb and baby root vegetables. The new dinner menu will offer a crispy Utah red trout stuffed with forest mushrooms and leeks served with hominy succotash and a sunchoked corn puree. Chef Trevino will take full advantage of area farmers and agriculture to highlight the freshness of local ingredients.
There will soon be more options for slope-side lodging. Construction on the Silverado Lodge will be completed by mid-season and will add an additional 200 rentable units at the base of The Canyons. Located directly across the street from the Grand Summit and Forum area, the resort will be managing the property and will be working closely with the developer and owners to keep the units full.
The 2006-07 season at The Canyons is one of the most anticipated seasons for the American Skiing Company resort. Along with the “Greatest Snow on Earth,” the $10 million expansion is making a day at The Canyons the ultimate skiing and snowboarding experience.
