If these recipes have one big fault, it’s that Kirby filled it with a dizzying amount of delicious choices. To make it easier on users, we emailed and asked him to choose his favorites.
“I would say that I have two,” he shared. “Since I’m a lover of pizza, I always love making the Basic Pizza Pockets (Page 53). We’ll add pepperoni, sausage, onion, or whatever else sounds good that day. Just can’t go wrong in my opinion.”
Basic Pizza Pockets
Ingredients:
- Bread
- Pizza sauce
- Shredded cheese
- Butter
Directions:
- Add butter and one slice of bread
- Add pizza sauce and shredded cheese
- Add another bread slice and add butter
- Close pie iron and cook until golden brown
*Get fancy by adding your favorite toppings, like meats or veggies.
Pie irons can also be used to create spectacular desserts. “The other is my favorite dessert recipe: Peanut Butter Cup Melt (page 73),” he added. “I love the Reese’s Peanut Butter Cups candy, and this is just a variation on that tasty treat . This is my go-to for absolute deliciousness.”

On a recent camping outing we put Kirby’s Pie Iron Recipes to the test. We made Spaghetti Sandwiches (Page 55), which is basically spaghetti and garlic bread all wrapped into a neat little package.
Other than having to boil pasta ahead of time, the recipe was effortless and the end result was appreciated by everyone sitting around the campfire.
Another time we created a tasty appetizer called “Brie in a Pastry” (Page 100) only instead of filling our pre-made pie pastry with sun dried tomatoes as the recipe calls for, we used cranberries and walnuts. Friends and family devoured it in minutes.

If your coals go out too soon, you can simply use a stove.
Here’s what we learned:
- Pie irons made of cast iron cook much better than the cheap aluminum ones.
- Buy several pie irons so you can cook a larger meal for many people.
- Prep your ingredients while the campfire is burning down into hot coals.
- Don’t be afraid to use plenty of butter. It helps the bready shell turn golden brown.
- Keep an eye on your pie irons–don’t let the food burn!
- If your coals go out before you’re meal is cooked, just finish it off over a camp stove.
